Vinification: The cultivation of vines in Sicily allow, thanks to particularly dry and windy conditions, to produce extraordinary grapes without the addition of any artificial, chemical products. We have simply used the climatic advantage and the ancient knowledge in vines cultivation on these soils, preserving the natural energy with organic cultivation techniques, with no GMO, protecting the floral and fauna biodiversity in respect of the environment. The vineyards are located in west Sicily at 350 mt asl. Hand-picked grapes are fermented in thermo-conditioned stainless steel tanks with no addition of selected yeast. The wine is fermented at low temperature for 10 days in order to preserve most of the aromatic flavors of the varieties.
